Courgette and Walnuts recipe
Ingredients:
3 tablespoons of butter.
½ cup of walnuts, coarsely chopped.
1 ½ lb of courgette.
½ teaspoon of salt.
Freshly ground black pepper, to taste.
Directions:
In a large skillet, heat 1 tablespoon of the butter.
Stir and toss walnuts until lightly browned (about 8 minutes), then remove from the skillet.
Wash and trim ends from courgette, then slice half-inch thick.
Heat the remaining 2 tablespoons of butter in the skillet and sauté courgette slices until they start to soften.
Combine the walnuts and courgette in a heated serving dish; season with salt and pepper.
Toss and serve.
